Low Carb Macaroni and Cheese (aka Macaphony)

You will need:
1 bag of frozen cauliflower, cooked
3 oz of cream cheese
2 tablespoons of heavy cream
1 cup of shredded cheddar

Preheat oven to 350. Pour a little cream into the bottom of a baking dish and add a handful of cheddar. Place the cream, cream cheese and remaining cheese in a microwave safe dish and microwave it until all can be stirred together easily. Pour drained cauliflower into a baking dish while cauliflower still hot. Pour the cheese mixture over and stir well to the mix. Sprinkle some Parmesan cheese over the top. Bake for 35 minutes and allow to stand a few minutes afterwards.

Total: 20 carbohydrates, 10 fiber (10 NET carbohydrates), 963 Calories, 76 fat, 45 protein. Serves two as a main dish and four as a side dish.
